Cocoa Buttermilk Pancakes with Strawberries

My baby, aka college sophomore, got home yesterday for spring break.  The 'mom' hormones are in high gear and I have the overwhelming urge to welcome her with a special breakfast.


These choco-pancakes aren't as unhealthy as they sound...they're made with part whole wheat flour, Ovaltine, yes, Ovaltine, and they're topped with fresh fruit, so they're kinda/sorta nutritious.


I had Ovaltine leftover from making Joy the Baker's amazing Frosted Brownies last month, but if you don't have any, (which is just another way of saying you didn't heed my advice to make those amazing brownies, because if you did, you'd have Ovaltine, but, whatever) just use cocoa powder, your pancakes will be even more chocolaty.  If you've decide to throw health concerns out the window you could also add in some mini chocolate chips. 

Cocoa Buttermilk Pancakes
1 cup all purpose flour
3/4 cup white whole wheat flour
1/4 cup Ovaltine or unsweetened cocoa powder
2 tsp baking soda
2 tsp baking powder
2 large eggs, beaten
1/4 cup sugar
1 1/4 cups buttermilk
4 Tbsp melted butter, cooled
a splash of vanilla
  • Mix the dry ingredients together.
  • Mix the wet ingredients together and combine the two, mixing just until everything is incorporated.  Don't over mix, lumps are good.  If the batter seems too thick, add more buttermilk.
  • Cook the pancakes on a hot griddle and serve with sliced strawberries and maple syrup.


This daughter has always been the strawberry lover in the family so I know these will be a hit.

The only problem is, she won't be up till mid afternoon.

  1. These pancakes look amazing and your daughter is going to be one happy girl when she wakes up. You could pair them with an egg or two and call it brunch since she won't be eating till noon!

    I remember the days when we would sleep in till noon and stay up till 1:00 or 2:00. These days I am usually asleep by 9:30 or 10:00 and up by 6:00 (I actually prefer these hours).

    Have a great Sunday and try not to eat all those delicious pancakes before your daughter gets up :)

  6. Those look wonderful! I do have just plain malted milk and since the kids adore the malted chocolate waffles I make with that, I think they'll love these too. Strawberries have been hit or miss in our stores lately, I think I'll wait for some really pretty ones to come in before I try these out.

  9. What a lucky daughter you have - those pancakes look absolutely divine. I love buttermilk, and we often make whole-wheat pancakes with them as well. Just such a lovely flavor combination, isn't it?

  13. Oh yummy, do these ever look good. Give me strawberry and chocolate anything and I am thrilled. It's a funny thing with kids. They say wake me up for breakfast if you make anything good and then when you go to wake them up they say I didn't mean this early its only 11:30.

  16. These pictures are absolutely mouthwatering and I love the idea of combining cocoa with buttermilk. Strawberries are just starting to pop up in the grocery store here and so I think I'll have to give these a try...it's been ages since I made pancakes!

  18. I say let her sleep! Mine were always a lot grumpier if they were awake too early :) Being young doesn't last long enough. Besides that's more pancakes for you!

  19. i can't remember the last time i slept past 6 am, and that's probably a little crazy for a gal in her 20s. oh well--it works for me! i like that there isn't TOO much cocoa in these pancakes--it looks like just the right amount to me. :)
