Put the oats in a large mixing bowl. Heat the coconut oil in a glass measuring cup briefly in the microwave just to melt, it will only take a few seconds. Stir in the honey and almond extract. Drizzle onto the oats, stirring and turning the oats constantly to evenly coat them. Stir in the coconut and the almonds. Spread on a baking sheet and bake for about 15 minutes, stirring every 5 minutes to prevent burning. After the granola comes out of the oven, stir in the cherries, and allow it to cool on the pan. Transfer to an airtight jar.
