Here's another way to use all that summer corn that's flooding into the markets.
Saute some fresh corn kernels in olive oil until just tender. Throw in some chopped tomato, salt and pepper.
Add a bunch of torn basil leaves.
Add your favorite pasta, cooked al dente, straight from the hot water into the pan.
Toss with a little Parmesan or Asiago cheese.
Have a great Monday!
This is wonderful. I'm looking for ways to use up the basil in my garden.
ReplyDeleteI love this! I never paired fresh corn with pasta and this looks so good!
ReplyDeleteThis has my name on it, Sue. I love making simple pastas like this. I'm guessing that my next batch just might have some smoked salmon tossed in as well! Have a beautiful week!!
ReplyDeleteA perfect meal and pretty too! Nice garden-to-table recipe!
ReplyDeleteThis is absolutely one of my favorite way to eat fresh summer vegetables--with as little done to them as possible! So fresh and quick--love it. :)
ReplyDeleteDelicious way to incorporate summer veggies! Thanks for sharing!
ReplyDeleteScrumptiously minimalistic! A great combination.
ReplyDeleteCheers,

I think we're being affected by that drought hitting the corn crops. I keep looking and looking for fresh corn in the markets and there is very little! We loved corn still in their husks grilled in lots of pesto...maybe soon!
ReplyDeletei love fresh corn in just about anything especially pasta! This sounds wonderful!
ReplyDeleteI think I will add some asparagus or spinach to mine for that extra dose of green veggies. =)
ReplyDeleteI made this tonight but started by sauteing a shallot. Delish!
