Care Packages 101: Peanut Butter Chocolate Chip Blondies

It's that time of year again.  Classes start for both my girls this week, and I want to get off a couple of care packages so that they arrive right at the beginning of their year.  A good care package should be lovingly packed with the taste of home, and that means no-fail family favorites, like these Peanut Butter Blondies, for one.


To make a successful care package you need to start at the crack of dawn.  You need time to bake, cool and pack your goodies  and then get them to the post office in time for an early pick up.  I try not to pack too much so that it's overwhelming, but enough so that they can share with new or old buddies.  I always include napkins.


These are good for shipping because they will stay moist, thanks to the brown sugar and peanut butter.  I'm going to wrap each one in plastic wrap for easy grabbing on the fly.



Peanut Butter Chocolate Chip Blondies
oven to 350
line an 8x8 square baking pan with a sling of parchment or foil for easy removal and cutting
6 Tbsp unsalted butter
3/4 cup packed brown sugar
1/4 cup granulated sugar
2/3 cup peanut butter (I like smooth)
  • Melt the butter either in a saucepan or in a microwavable mixing bowl
  • Whisk in the sugars and peanut butter until thoroughly mixed.
2 large eggs
1 1/2 tsp vanilla
  • Whisk in the eggs and vanilla.
1 cup flour
1/4 tsp salt
1 1/2 cups milk chocolate chips
  • Whisk together the flour and salt and stir into the wet mixture.  Then fold in the chips.
  • Bake for about 30 minutes until a toothpick comes out moist but clean.  Don't over bake---treat these blondies as you would brownies and err on the underdone side.

Tomorrow I'll be making my Chocolate Chip Pumpkin Bread.  This recipe is a special one, my kids howl if they don't get some right at the start of September, and it's good enough to revisit.

    1. That's a great idea, it's funny how I'm not as adventurous with family favorite recipes! I think either one would be really good with whole wheat, I may just have to break with tradition!

  5. Sunday I am posting my Pb blondies that I made in Aruba - almost a month ago. I had so many posts to get thru and the timing just worked out that way and seeing your blondies makes me hungry! They're beautiful - what a great recipe!

    And that pumpkin choc chip bread - I've seen that in your archives and it's a stunner! I want it!

  7. Mmmmm. I do love me some blondies! Would you send some to MY daughter, too? She is at Wash U in St. Louis and I am living in Paris, so care packages are few and far between. LIke never!

  9. Made these yesterday. They turned out awesome and are really good. The only adjustment I made was in the amount of chocolate chips. Decreased those to 3/4 cup instead. Splurged and ate one warm with a little vanilla ice cream on top. Soo good. Thank you for sharing your recipes. I know we all love them. :)
