Minimal Monday: Chocolatellows

I spent all day yesterday, from dawn to dusk, sitting in a chair trying to fix my computer.  Everything was running maddeningly slow, and all of a sudden I couldn't upload files or photos anywhere.  My usual go-to method, restart, which I think of as the modern equivalent of a good swift kick, failed me.  Even so I restarted about 1300 times, restored the thing to several different back dates, toggled and un-toggled all kinds of boxes, researched, scanned, defragged, clicked on anything and everything that might help, and then restarted a few more times.  Anyway something I did worked, because when I checked in after dinner, things were back to normal.  Take that computer repair store!  That's what you get for being closed on the weekend.

Now I feel all triumphant and ready to go, but, having been in that chair all day yesterday, I have nothing to share with you.  So in the spirit of Minimal Monday, I'm going to make do.  Remember the Homemade Marshmallows from last week?   Here's a fun thing to do with them that the kids will love.

I know this will appeal to kids because when one of my daughters, I don't remember which one, was in 4th grade, everyone in the class had to invent something.  They had to actually manufacture it, and give a presentation on it.  I remember that part clear as a bell because school projects are just the teacher's way of checking to see if the parents are paying attention.

You guessed it, my daughter invented Chocolatellows.  She dipped regular store bought marshmallows in chocolate, and the rest is history.  So, at the risk of copyright infringement, I give you my gourmet version.

All you do is take 8 oz (one box) of baking chocolate squares, either milk or dark, and chop them up a bit.  Put them into a glass measuring cup and microwave until melted.  Give it a minute to start, then stir, and put it back for 15 second intervals, stirring in between, until it's smooth and thinned to a dunking consistency.  It might take 1 1/2 to 2 minutes.

Working with one at a time, toss the homemade marshmallow in the chocolate until covered, and then, using a fork, lift it up and tap the excess off against the side of the glass. This is important, you want to get the excess off before setting it down on parchment paper.  If the chocolate thickens as you're working, put it back in the microwave briefly to heat it back up.

Then you can decorate them, or leave them plain.  Put a stick in them if you want to.  You should be able to coat at least 16 marshmallows with the chocolate. 

They'll look amazing floating in your hot chocolate.
