I hate to be predictable.
But I need to drop a few pounds.
I don't know how it happened.
I swear I wasn't gorging on holiday sweets.
It was only a handful of chips here.
And a truffle or two there.
You too? Not to worry, I've got a plan.
Multi Grain Raisin Walnut Bran Muffins
makes 12 muffins
oven to 350
1/2 cup oat bran
1/2 cup wheat bran
1 cup buttermilk
1/2 cup chopped walnuts
1/2 cup jumbo raisins
- Mix the brans, the buttermilk and the nuts and raisins together in a small bowl.
1/4 cup brown sugar (packed)
2 large eggs, room temperature
6 Tbsp molasses
1 Tbsp vanilla paste or extract
- Cream the butter and sugar together for a couple of minutes, then add the eggs, one at a time, and the molasses and vanilla.
1/4 cup buckwheat flour
1/4 cup millet flour
1/4 cup oat flour
1/4 cup barley flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
- Whisk the dry ingredients together in a small bowl. Add the dry ingredients alternately with the buttermilk mixture to the creamed butter mixture, beginning and ending with the dry ingredients.
- Spoon the batter into greased muffin cups and bake for about 20-25 minutes until a toothpick comes out clean.
- Cool on a rack.

I dont know anyone who doesnt have an extra handful of this or that during the holidays. Bran muffins to the rescue. You did a great job on making healthy look delicious!

DeleteThese sound delicious, Sue. I've been off almost all grains for the past few days, just to reset my sugar cravings. (I, for one, DID over indulge this year - yikes!) and holy smokes, you just kicked the cravings into overdrive. Your muffins always look perfect.
ReplyDeleteI'm interested to hear how you do with the no grain thing. I would have a hard time avoiding all grains but I have a feeling it would be very invigorating.

DeleteI am SO WITH YOU on that. I only remember sitting down to eat a few actual meals, but somehow...between the grabbing of the chocolate cookies and the snacking on the go....um....(sigh)
ReplyDeletethese muffins make me incredibly happy. call me weird, but bran muffins are perhaps my favorite muffin, just because i love the flavors, but also i like that i feel like i'm doing something good for myself. i've done raisin, but not walnut too, so i'm looking forward to these showing up hot from my oven. book. marked. :)
I agree about the flavor, and I think the texture of bran muffins being especially good. They have a bad reputation I think because of the hockey puck restaurant versions. No hockey pucks here!
